Banana Pancakes

What better way to start the day than having pancakes for brekki?! Especially when they are guilt-free! 

This recipe is easy, quick and super delicious that I had to share it with you!! The pancakes are gluten free, dairy free, wheat free and refined sugar free :) 

A little tip: The riper the banana, the sweeter the pancake! 

This recipe was inspired by BBC Good Food 

 

Ingredients:

 

2 ripe small bananas 

2 eggs

1/2 tsp baking powder 

1/2 tsp vanilla bean paste or extract 

1 tsp coconut oil (cooking) 

 

 

Method: 

 

Mash the banana in a bowl with a fork until you have a banana purée.

In a seperate small bowl, beat the eggs with the baking powder and vanilla. 

Combine all ingredients.

Heat 1 tsp coconut oil in a non stick frying pan. 

The mixture should make 4 pancakes (the size of the usual scotch pancake)

Depending on the size of your pan, fry two at a time, two minute either side or until flipable!

The pancakes should be a lovely golden brown

Serve with whatever you like. I love Maple Syrup so that alone is heaven for me but you could get creative and top with nuts, seeds, berries, honey, yoghurt...the list could go on!!
