Making Kale Delicious

Kale can be tough and boring to eat, but by massaging a dressing into the leaves this makes the kale soften therefore easier to eat and much tastier. Kale is very high in fibre and full of nutrients, vitamins, folate and magnesium so it certainly isn't a bad thing that it has become a trendy food and it has been hash tagged over two million times!! 

 

Ingredients

 

4 large handfuls of kale

2 heaped tbsp tahini

Juice of a lemon

2 tbsp tamari soy sauce

1 tbsp apple cider vinegar

 

Optional salad toppings but you can use any of your favourite things:

 

half an avocado (seed removed, cubed and scooped out)

half a pomegranates seeds

1 tbsp sunflower seeds 

6-8 Chestnuts (chopped roughly)

 

Method


Put the kale in a large salad bowl tearing off any thick, tough stems


In a separate bowl mix the tahini, lemon, tamari and apple cider vinegar. Mix well

 

Pour the dressing over the leaves and massage using your hands until the evenly distributed and leaves soften

 

The sweetness from the pomegranate seeds really compliments this salad so I highly recommend adding them but really you can add anything to your salad. 

 

Serves 2 for a main or 4 side salads
