We all love a comforting tuna mayo jacket potato, however, I knew that the two big dollops of mayo wasn't doing anything for my chunky thighs, and let's be honest - tuna, olive oil and a bit of salt doesn't cut it! So for a more nutritious, creamy tuna jacket potato filling, try this easy alternative:
1 tin of good quality, sustainable tuna
1/2 ripe avocado
2 tbsp olive oil
1/2 tsp Dijon mustard
The juice of 1/2 a lemon
Salt and pepper
2 tbsp sweetcorn (optional)
Mash the avocado in a bowl with a fork until smooth
Mix in the olive oil, mustard, lemon, salt and pepper. Stir well until you have a creamy consistency
Stir in tuna and add sweetcorn if you wish.
Serve with a sweet jacket potato and a side salad for a filling, healthy and delicious lunch!
