Raw Vegan Tacos

One of my favourite dishes of all time are the smoky bbq fajitas but these raw vegan tacos seriously take Old El Paso on a run for his money!! 

 

I have recently been watching a lot of @veganhustleTV (a bodybuilding vegan on youtube) He did a 7 day raw vegan fitness challenge which inspired me to recreate this dish. This is without doubt going to be made at least once a week in our house! It was such a hit taste wise and to think how much love you are giving to your body with all these living foods! #powerofplants

 

So yummy, so easy and no cooking required!! Are you in?!

 

The Elements:

Cashew Cream Cheese

Tomato, Red Onion and Red Pepper Salsa

Walnut Meat

Guacamole

Boat type lettuce - Sweet Gem, Baby Gem, Romaine

 

Cashew Cream Cheese

 

You will need:

1 cup of cashews

Juice of 1 lemon

2 garlic cloves

1 tbsp apple cider vinegar

1/2 cup of water 

1 tsp dijon mustard 

pinch of salt and pepper to taste 

 

Method:

You will need to soak the cashews in water for an hour before making the 'cheese'. (The longer you soak the cashews, the creamier the 'cheese')

 

Drain the cashews and put all ingredients into a blender or food processor. Blend until you have a smooth cream, scoop into a bowl and refrigerate to firm it up a bit. (tastes a bit like Boursin cheese!!)

 

Tomato, Red Onion and Red Pepper Salsa

 

You will need:

2 handfuls of cherry tomatoes 

1/4 red onion

1/2 red pepper

handful of fresh basil leaves

juice of 1/2 a lemon

1 tbsp olive oil

pinch of salt and pepper

 

Method:

Chop the cherry tomatoes in half and put into a medium sized bowl, finely chop red onion and red pepper and add to the tomatoes. Roughly chop basil and add to salad mix. Squeeze the lemon on top of salad, pour olive oil on top along with a pinch of salt and  pepper and thoroughly mix. Set aside.

 

Walnut Meat 

 

You will need:

1 cup of raw walnuts

1 tsp cumin 

1 tsp paprika

1 tbsp tamari soy sauce 

 

Method:

Add all ingredients into a blender and blitz to a crumb and set aside- that simple. Just wait till you try it in your tacos!

 

Guacamole

 

You will need:

1 ripe avocado 

1/2 juice of lemon

pinch of salt 

 

Method:

Destone the avocado and scoop out the flesh into a bowl with the lemon juice and salt. Roughly mash with the back of a fork until creamy but still a little chunky. DONE

 

Now wash your lettuce leaves (about 6) and lay out all the elements onto a table for everyone to dive into.

 

This recipe serves 2 to 3 people depending on your appetite so just double ingredients if you have guests. I promise you will not miss the meat!
