Rye Toast 4 ways

My favourite breakfast...a slice of toasted rye bread with something tasty AF on top!

 

These four simple recipes are so easy and quick to follow but thought I would share my favourite toppings with you, if you have any faves then let me know, I'd love to try them! 

 

So savoury first!!

 

1. Smashed Avocado, Cherry Tomatoes, Rocket and Seeds

 

You will need:

1 slice of rye bread 

1 ripe avocado

juice of half a lemon

a few cherry toms

handful of rocket

sprinkle of seeds (any)

salt and pepper

drizzle of olive oil

 

Pop the bread in the toaster. Meanwhile cut avocado in half and destone. Scoop out the flesh into a bowl with the lemon juice and a pinch of salt. Mash with the back of a fork until creamy. Toast should be done. Spread the avo on to the bread. Chop tomatoes in half and evenly place on top along with handful of rocket and seeds. Season with salt and pepper and a drizzle of olive oil! Yum - my all time fave! 

 

2. Wilted Spinach in Grass Fed Butter with a Poached Egg 

 

You will need:

1 slice of rye bread 

100g spinach (small bag)

knob of butter

1 egg

1tsp apple cider vinegar

salt and pepper 


In a small saucepan, bring water to the boil (about 3/4 of the pan full) Whilst waiting for the water to start bubbling, melt a knob of butter in a frying pan and add the spinach, once the spinach becomes wilted turn off the heat, season with a pinch of salt and pepper. Pop bread in the toaster. Once the water in boiling, add vinegar and then stir the water to create a whirlpool. crack the egg into a ramekin first and slowly pour it into the simmering water. Cook for about three minutes. Once your toast is ready, layer up with the spinach. Remove the egg from the pan with a slotted spoon and place on top of the spinach. DONE. Get ready for some yolk porn!

 

3. Strawberry Slices, Almond Butter and Chia Seeds

 

You will need:

1 slice of rye bread

a few strawberries 

1 tbsp almond butter

1 tsp chia seeds

 

Really easy but literally a match made in heaven on a plate! So, pop the bread in the toaster. Meanwhile, wash and slice the strawberries. Once your toast is ready, it's time to plate up. Evenly spread a dollop of almond butter over the toast. Lay out the sliced strawberries and sprinkle with chia seeds. Enjoy! 

 

4. Sliced Banana, Peanut Butter and Walnuts

 

You will need

 

1 slice of rye bread

1 banana

1 tbsp peanut butter (natural and no palm oil)

handful of walnuts

 

Similar to the one above, simple but tasty as hell!! Pop bread in toaster, slice up the banana. Dollop the peanut butter onto the toast and spread evenly, lay out the bananas and crumble walnuts on top! #getinmybelly
