Mango, Avocado and Kale Salad

A colourful salad loaded with vitamins and nutrients. It is high in fibre and is great for aiding in digestion. It is also full of healthy fats which are good for the heart, the brain and every cell in the body. The mango brings the perfect sweetness to salad and makes the salad come alive! Really easy and no cooking required





250g Kale

1 mango

1 avocado

1 tbsp sunflower seeds

1 tsp sesame seeds

1 tsp poppy seeds


For the dressing:


2 heaped tbsp tahini

2 tbsp tamari

1 lime

1 tsp flaxseed oil




Remove stems from the kale and put into a salad bowl. In a small bowl make the dressing. Give it a good stir, sometimes the dressing thickens too much so you can loosen with a dash of water. It should be a creamy consistency. Pour the dressing over the kale and massage into the leaves. 


Whilst the kale is softening in the dressing, cut around the stone of the mango so you have two halves. slice them into chunks in the skin then scoop out with a spoon. Do the same with avocado and add to the kale. sprinkle on the seeds and give it all a good toss. 


This salad can be served with a protein of your choice - tofu, chicken, salmon, cheese or simply on its own to make a light and plantiful lunch! Enjoy x
