A delicious, healthier pancake recipe that will be a great start to your pancake day rather than filling your boots with the usual pancakes and then having a major carb crash after! It is also incredibly easy!!
This recipe serves one to two people so double if needed!
2 tbsp oat bran
2 tbsp plain/greek yoghurt
coconut oil for frying in
In a medium sized mixing bowl break and whisk 2 eggs
Add the oat bran and the yoghurt and whisk until smooth.
This consistency is perfect for american style pancakes, however if you fancy crepes you can thin out the recipe with egg whites or a milk of your choice
Melt 1 tsp coconut oil into a large non stick frying pan and once the pan is heated add the mixture, as much or little as you like. The pan should now be on a low to medium heat. Once the mixture is dry on the top you can flip the pancake. Cook until golden!
Top with your fave pancake toppings!
