This pasta sauce is seriously easy and quick, its high nutritional value down to all the green goodness makes it a healthy and filling lunch or dinner! All you need is a pan and a blender along with some simple ingredients. The avocado makes the sauce silky whilst the spinach gives the pop eye green colour!
For a 2 person serving
- 1 courgette (peeled and roughly chopped into chunks)
- 1 tbsp olive oil
- 1 handful spinach
- 1/2 avocado
- Juice of 1/2 a lemon
- 1 tsp salt (not table salt)
- 1 tsp oregano
- a few grinds of black pepper
In a pan, cook a pasta of your choice. Here I used Edamame fettuccine which can be found in health food stores and some supermarkets.
In a separate pan, boil the courgette until soft (about 10 mins)
Drain and add to blender along with all the other ingredients. Blend until smooth and silky.
Season to your liking for a perfect speedy lunch or dinner!
Tip: You can pimp up this dish by sprinkling with left over ingredients - Salmon, Chicken, Chilli flakes, fresh herbs, broccoli, peas...the list is endless!
