Warming Butternut Squash Soup

It's that time of year again...knitted jumpers, candles, cosy socks and bucket loads of soup! Its a lunch time fave and a great way to get veggies in. This quick and simple recipe is so warming and more-ish, I make it in a huuuge pan and have it in the fridge for when we fancy.

 

Ingredients:

 

1 butternut squash 

2 carrots

2 medium sweet potatoes

1 leek 

1 onion

2 cloves of garlic

knob of butter

1 pint of vegetable stock

1/2 tsp paprika

Salt and Pepper to taste

 

Method:

 

Roughly chop the onion, leek and garlic. Melt a knob of butter in a large pan and add the onion, leek and garlic. Saute on a medium heat for 5 or so mins, stirring every couple of mins. Meanwhile peels the butternut squash, carrots and sweet potatoes. Cut into chunks and add to the pan. Add paprika and a pinch of salt and pepper. Pour stock into the pan so that it just covers the veg. Put the lid on and boil for 15 mins or until the veg is soft. Allow to cool for a few mins and then pour into blender if you have one, if not, use a hand blender. Blend until smooth and season to perfection with salt and pepper!!
