Chicken, Bacon and Bean Casserole

 This warming and tasty casserole makes a great family dinner, its rich and full of flavour. Its well worth making a big batch of this and having leftovers as its even tastier the next day. Imagine this on a Sunday afternoon with a big chunk of crusty loaf! YUM! 

 

You will need:

 

- 4 good quality skinless and boneless chicken thighs

- knob of ghee/butter for frying

 

Chicken marinade

- 1 tsp turmeric

- 1 tsp cumin

- 1 tsp cumin seeds

- 1 tsp garlic powder

- 1 tsp paprika

- juice of 1/2 lemon

 

 

- 4 rashers of smoked streaky bacon cut into pieces

- 1 chopped onion

- 2 cloves of garlic (minced)

- 2 tsp cumin

- 1 tsp cinnamon

- 1 tsp smoked paprika

- dash of balsamic vinegar

- 1 tbsp tamari soy sauce

- tin of cannellini beans (drained and rinsed)

- 300ml organic chicken stock

- 1 tin chopped tomatoes

- salt and pepper

 

Method

 

Place chicken thighs into a bowl and add all the marinade ingredients. Massage the marinade all over the chicken. Heat ghee/butter in a pan and fry the chicken until brown.

 

In a large casserole dish melt a knob of ghee/butter and saute chopped onion and streaky bacon, after five mins add the minced garlic and fry for another 5 mins until soft. Add all the spices and stir. Once the spices have had a moment releasing their aromas go ahead and add the balsamic vinegar and soy sauce. Give it all a good stir then get the beans in. Add the chicken thighs, chicken stock and the tin of tomatoes, stir it all up, pop the lid on and bring to the boil. Once bubbling, turn down the heat, give it another stir and allow to simmer for about an 45 mins or until you have a thick and rich sauce. Season to taste! 

 

Serve with a side of greens, I'm talking broccoli, dark leafy greens - giving the meal a nutritious kick up the back side. Also great with rice, mash or crusty bread!
